Pumpkin parcels


These mini pumpkins are adorable! We found these in the supermarket around Halloween and decided to try them out. We kept it simple by cutting the top off, scooping out the inside seeds then adding slices of butter, a few sprigs of thyme and some salt and pepper. Add as much or as little as you want to your own taste.

Then, pop the top back on and put them in the oven for around 15 mins and check on them until soft.

Once cooked, take the top off and revel in the aroma of melted butter and hot thyme. The pumpkin because like soft spaghetti, very much like spaghetti squash. Enjoy alone or with some light meat.
