Brooke's Christmas Ice Cream


My Christmas (or any time) ice cream inspired by Curtis Stone.

Ingredients

2 900ml Movenpick ice cream tubs

1 jar of Haighs spiced fruit in brandy

frozen raspberries

frozen blueberries

honey cashew nuts

1 bread tin

cling film

Recipe

Put out the ice cream, frozen blueberries and raspberries to defrost slightly so soft. In the meantime take a bread tin and line it with cling film. Then scoop out all the fruit from the brandy jar and chop these into small pieces.

Once the ice cream has softened, take a large mixing bowl and add the ice cream and as many raspberries and blueberries as desired. Then crush some of the cashews and mix these in. Finally add the chopped brandy fruits.

I added a layer of berries and nuts on the bottom however they did move around and I didn't quite get the desired look of a berry and nut top!

Once everything has been mixed together, pour the mixture into the bread tin and layer the top with cling film.

Put into the freezer to set, testing every so often. Mine took roughly 5 hours to fully set.

The brandy fruits are quite strong and really add to this dish making the ice cream taste more like brandy vanilla than just plain vanilla.
