Colourful Roasted Vegetable Salad and Steak


I love this simple, healthy dish when you're really hungry and want to fill yourself full of goodness.

You can really add any vegetables to this dish but we like the ones listed in the ingredients list below.

Ingredients:

zuchini, sliced

red capsicum, sliced

sweet potato, chopped into chunks

whole cherry tomatoes

red onion, quarted

garlic cloves, whole

additional ingredietns:

rocket

feta cheese

protein

Throw all of these vegetables into a bowl and toss with olive oil, salt and pepper. Then place in a roasting tin and roast for 25-30 minutes or until soft.

When the vegetables are nearly finished, cook a piece of steak (or other source of protein) to your liking.

Finally, place a bed of rocket on your plate, pour on the vegetables and sprinkly over some feta cheese.
