Goats Cheese Bruschetta


Perfect as a snack, appetizer or with a nice glass of wine.

Ingredients

2 truss or plum tomatoes, diced and seeded

chopped basil

1 tsp sherry vinegar

sprinkle of salt and pepper

baguette - french, sourdough, ciabatta

1 garlic clove

goats cheese

Combine all ingredients except the bread, garlic and goats cheese in a bowl and set aside.

Slice the baguette and toast in the oven (turning once) until toasty but not burnt. Rub the garlic clove on both sides of all the baguette slices. Top with a layer of goats cheese and then add generous spoonfuls of the tomato mixture.
