Quick Turkey Stir Fry


This is a great mid week night meal that can be adapted to any taste. Add more vegies, use pork mince, add soy sauce, take out the chilli - whatever you feel like, this dish can be prepped and made within 20 minutes.

Ingredients

1 tbs peanut oil

1 tbs ginger, finely grated

1 garlic clove, crushed

1 tbs lemongrass paste

1 long red chilli, finely chopped

500g turkey mince

1 bunch choy sum, shredded

1 tbs oyster sauce

2 bunches broccolini

2 spring onions, thinly sliced

Recipe

Heat the oil in a wok over high heat and add the ginger, garlic, lemongrass and chilli and stir-fry for 1 minute or until fragrant.

Add the mince and fry for 5 minutes or until mince is cooked through. Add the choy sum and oyster sauce and fry for two minutes.

Meanwhile, cook the noodles to packet instructions and steam the broccolini (quickly douse in cold water once steamed).

Add the noodles and broccolini to the mince mixture and sprinkle with spring onions.
